Episode 66 Prairie, the new name for the native American woman bread.

This slightly sweet sandwich loaf was introduced once a week, and people loved it.  So, now we bake Prairie daily.   The recipe will yield two loaves.  Sponge:  2.5 cups of warm water, 2 packages of yeast, or 2T, 3/4 cup of honey, 3 cups of whole wheat bread flour, 1 cup of rye flour, 2 T of caramel color.   Let sit 1.5 hours approximately.   Then add in the second step: 1 package of yeast or 1 T, 1 T of salt, 3 cups of white bread flour, 1/4 cup of sesame seeds.  For more information about House of Bread, please visit www.houseofbread.com.
